6 tsp. of your favourite mix of warm spices (nutmeg, ginger, cinnamon, cloves etc).
Mix dry ingredients. Beat the eggs and vanilla into the oil and add to dry ingredients and stir. Then add the courgette and stir until smooth. Grease loaf tins well. Pour and spoon batter into tins, about half way up. Bake 1 hour at 175 C or Mark 4. Cool for 10 minutes, then remove from tins.
